Black Bean Quinoa Veggie Burger

Veggies burgers are a freezer staple for me and a GO-TO for lunch as they are versatile, nutritious, delicious, and a quick meal option.💃🏽 I love @hilaryseatwell and @goplantstrong, but the latter was discontinued in late 2020.⁠

Making a veggie burger sandwich is simple.💫 I toast two pieces of bread 🍞 , smash avocado on each side 🥑 , add some spices + arugula 🌱, warm up the veggies patty, melt some cheese on it 🧀, place between bread, top with pickled onions 🧅, and BOOM💥… lunch is served in less than 15 mins ⏲🙌🏽⁠

I was inspired to create my own, and I have been super excited to share 💜. It is thick, crispy on the outside, satisfying, and flavorful. You can throw it on a bun or top of a salad. This batch makes enough to freeze and share. ⁠✨⁠

💡FUN FACT: Quinoa is a plant-based complete protein as it contains all nine essential amino acids our bodies cannot produce⁠. ⁠

Ingredients⁠⁠

(Makes about 7-8 larger patties// 9-10 smaller patties)⁠⁠
🔸2c quinoa, cooked⁠⁠
🔸2 tbsp flaxseed meal (ground flaxseed)⁠⁠
🔸6 tbsp water⁠⁠
🔸2 cans of black beans, rinsed and drained⁠⁠
🔸2 tbsp avocado oil⁠⁠
🔸1 red onion, diced⁠⁠
🔸1 zucchini, diced⁠⁠
🔸1.5 tsp smoked paprika⁠⁠
🔸1 tsp turmeric⁠⁠
🔸1 tsp chili powder⁠⁠
🔸1 tsp garlic powder⁠⁠
🔸s+p⁠⁠

Directions⁠⁠
▫️preheat oven to 350 degrees⁠⁠
▫️add avocado oil, onion, zucchini, and s+p to a sauté pan and sauté until onions are translucent ⁠⁠
▫️mix flaxseed meal and water in a ramekin to make two flax eggs and set aside for 5 minutes⁠⁠
▫️in a large bowl, add black beans and mash ⁠⁠
▫️then add quinoa, sautéed veggies, spices, and flax egg mixture⁠⁠
▫️mix all together (feel free to use hands if that's easier)⁠⁠
▫️use 1/2c measuring cup to scoop mixture for larger patties or 1/3c for smaller patties⁠⁠
▫️line a baking sheet with parchment paper and add patties⁠⁠
▫️put in the oven for about 20 mins and flip halfway through.⁠⁠

🌟Tip: if reheating at home, use a skillet to warm up the patty, and pop into the broiler to melt the cheese.⁠
