Black Bean Quinoa Veggie Burger
Veggies burgers are a freezer staple for me and a GO-TO for lunch as they are versatile, nutritious, delicious, and a quick meal option.💃🏽 I love @hilaryseatwell and @goplantstrong, but the latter was discontinued in late 2020.
Making a veggie burger sandwich is simple.💫 I toast two pieces of bread 🍞 , smash avocado on each side 🥑 , add some spices + arugula 🌱, warm up the veggies patty, melt some cheese on it 🧀, place between bread, top with pickled onions 🧅, and BOOM💥… lunch is served in less than 15 mins ⏲🙌🏽
I was inspired to create my own, and I have been super excited to share 💜. It is thick, crispy on the outside, satisfying, and flavorful. You can throw it on a bun or top of a salad. This batch makes enough to freeze and share. ✨
💡FUN FACT: Quinoa is a plant-based complete protein as it contains all nine essential amino acids our bodies cannot produce.
